Beet greens are totally edible because they're related to chard and spinach.

Wash them and put them aside - they can be sauteed, added to pasta or if really fresh, used in salad.

The greens are  a good indicator of a beetroot's freshness and if the greens are already wilted, chances are good the beets aren't that fresh (and that's why we remove them). 

Store your beet bulbs in a sealed, plastic container or bag and keep in your vegetable crisper drawer. Remember, just like carrots, if you wash them before storing them, dampness will only speed up the rotting process. Leave them unwashed until you're ready to use them.
